RALEIGH—Every year the N.C. State Fair introduces new fried foods.

S2 Concessions, which brought us deep-fried Girl Scout cookies and red velvet mini donuts in previous years, will this year offer two new deep-fried treats: peanut butter pickles and bacon-wrapped Tootsie Rolls.

The treats aren’t for the faint of heart. Picture the peanut butter pickle as sort of an open-faced pickle sandwich. It’s a giant pickle cut in half, smothered in peanut butter, and then dipped in batter and deep-fried.

“If you love pickles, you’ll love deep-fried peanut butter pickles. The sweet and tart sensations together make for a really good, crazy combination,” said Scott Strother of S2 Concessions.

Deep-fried Tootsie Rolls have been tested before, but they were a little too sweet. This year’s concoction is a giant Tootsie Roll, cut in half, wrapped in bacon, and then dipped in batter and deep-fried.

“The sweet chocolate sensation of a Tootsie Roll, combined with the salty bacon flavor contrast each other really well,” Strother said.

And the batter for this year’s deep-fried treats? You might say it’s North Carolina-grown. Atkinson Milling Company, a Selma, gristmill that has been in operation since 1757, does the batter work for S2 Concessions.
