What is a BBQ Lollipop? It is one delicious chicken drumstick and is super moist after cooking on the grill or on your smoker. To my friends in the North, you still have time to make this BBQ favorite. And to my friends down South, it’s a year-round treat!

The secret to the lollipop is to “French” the chicken drumsticks. I’ll explain below…

Here is your shopping list:

1. Chicken drumsticks

2. One lb. of thin sliced bacon

3. One jar of your favorite BBQ Sauce

4. Lawry’s Seasoning Salt

Start off by heating the grill to high and prepping the chicken. With a very sharp knife, “French” the chicken drumsticks. To do this, find the base of where the meat ends and take a very sharp knife and cut right through the skin and tendons around the bone and then scrape off by pulling the skin back and off the joint of the bone (gristle and all). You will also want to slice the cartilage at the meaty part of the drumstick in order to allow it to stand on the grill.

Once prepped season with Lawry’s Seasoning Salt all-around the drumstick. Take a slice of bacon and wrap around the drumstick starting at the bottom until you cover all the meat. Once the grill or smoker is ready, place chicken in a stand-up position over in-direct heat (keeping the outside gas going high and the middle gas off). Close the lid and cook until you see the bacon brown and harden around the chicken. While the chicken is cooking, take a ‘wide-mouth’ glass or cup and fill with the BBQ sauce. Remove the chicken drumsticks one-by-one and dip into the sauce to completely cover the meat. Add back to the grill and lower the lid. Continue cooking until drumsticks cooked through. I had my drumsticks on the grill for a total of 35 minutes but make sure that the juices run clear by piercing with a skewer as cooking time may differ from grill to grill.

I have yet to try smoking these babies but I know that they would come out amazing…Just a lot longer cooking time.
